eating the distance -- data cuisine


I attended a workshop in July 2016, Data Cuisine; it was a "collaborative research experience" where all the participants worked together to create dishes representing some local data.

My team concocted a range of small-bites that included strictly local ingredients, to more exotic elements. The dish was presented on a long table, each small-bite was spread out across the table in proportional distance to the miles the ingredients traveled. In order to eat the dish, diners had to travel further to get food that traveled farther to get to them.


gin rickey twist: 80 miles combined travel
local cherries, gin, honey, and mint

yogurt-covered berry: 400 miles
local strawberry, honey, and yogurt

creamy mango-pistachio bite: 7000 miles
whipped feta and toasted pistachios on mango leather

coconut pineapple pudding cone: 21,000 miles
tapioca coconut pudding, pineapple chunks, coconut cream, wrapped in banana leaf
